Sometimes the easy answer is the right one.
I have spent considerable time this week trying to figure out this conundrum. I get bored at stoplights, frustrated by meaningless conversations and rarely watch a movie twice. Yet I am perfectly happy to go back to the same spot to watch water tumbling over rocks and somehow be mesmerized by the experience.
The reasons I explored involved lots of adjectives about sights, sounds and feelings. I even tried to wax eloquent about the stream being pulled to an unseen destination with an irresistible allure and then pulled out the introvert card. It was obvious I really had no idea. Then I remembered a story.
A few decades ago, Wal-mart stores had not yet come to Canada. I recall an older friend wryly noting that his wife wanted to go to Wal-mart at each US city on their last trip. He couldn’t understand why – the stores were all identical.
It turned out his wife just liked Wal-mart – a lot. And me? I think Wal-marts are all the same too, but … change that to sitting by a creek and I don’t want to drive by either.
I was really hoping for a more profound answer but I have to settle for the simple one – I like it.

You put into words exactly how I feel. I am usually a very restless person, always ready for something new, but I love nothing more than sitting on the edge of a meadow for hours and watching nature. Great post.

If you want to sound profound, you could quote the pre-Socratic Greek philosopher Heraclitus, who said that “No man ever steps in the same river twice.” When you return to the river, it is the same, but it is not the same (and you are not the same). Is that profound enough?

Looking at a complex natural pattern is somehow soothing, and …grounding? And it’s never the same river twice. It changes from moment to moment.
